Margarita Monday

Last night I had my lovely galfriends over and got seriously bitten by the blog bug. Well actually, I’ve been getting a lot of flak lately from slacking on my daily entries, but as I discussed with my girls, it is one of those things that cannot be forced. You’ve got to do it when you have the time and when it’s enjoyable. Otherwise, it just isn’t that damn ‘colorful’ right?

Before jumping in and sharing some details about our festive Monday, I have to throw a shout out (I just felt very masculine typing ‘shout out’) to one of my best girl’s blog. She recently revamped it and has been keeping it a secret that she has been posting regularly! Reading through it this AM, I am just loving it and it inspired me to get back into the swing of things. Check it out, here.

Onto our Margarita Monday. This idea actually stemmed from a set of margarita glasses that Billy and I were given as a wedding shower gift that I had yet to use. They’ve been sitting in our curio cabinet for some time now, begging to come out and be filled with limes, salt and Skinny Girl cocktails. Oh, how they got what they wanted last night.


So let’s talk menu. I always, always, always try to stick to my mindset from this post and keep things within my capabilities now when entertaining. Whilst planning, I made a mental note that this was on a Monday evening, after having a big project due at work, so I knew myself enough to keep it simple. Thank goodness for my favorite housewife, Bethenny Frankel's, cocktail line, as I was able to grab the drinks, some limes, salt and I was on my way. No blenders or mixers involved at this Monday Funday ladies.

Food Menu:
  • Homemade Margarita Pizza (how could I not?)
  • 3 Layer Salsa dip (this literally took me less than 5 minutes to prepare, 20 minutes in the oven, easy, peasy)
  • Goat Cheese and hot pepper jelly with bread slides
Drink Menu:
  • Skinny Girl Margarita
  • White Peach Skinny Girl Margarita
  • White Wine (which no one drank because the margaritas were too yummy)
As usual, I was nervous to make the margarita pizza, just because I had never made that type of pizza before, plus my amazing husband is usually the pizza maker at our house. But I did it, everyone survived, and I actually think it was pretty scrumptious. 

All in all, it was so nice to spend some time catching up with my girls. Bill calls us the Real Housewives of K-town, (if you don’t watch Bravo, ignore this sentence), and I have to say, I think us gals have really taken a liking to the title. We, of course, don’t scream at each other every time we get together like those Bravo housewives, but we love to get together, have a drank and gab the night away.


So now that I am back and committed (blame my job if I break this promise), what is coming up? I have TONS of things I need to catch this 'colorful' journal up on. Here are a few that are coming soon;

  2. Thanks!! I am glad to be back. I feel so refreshed! :) We must go SOON! I had so much fun. I'll keep an eye out for estate and yard sales and let you know if I find anything good.
